Known for its caramelized top and soft, creamy, almost custard-like texture, the addition of pistachios makes the resulting flavor even richer, more unique, and more appealing to lovers of luxurious desserts.

For those who love slightly melted cakes, they will love this. It is called Pistachio Basque Cheesecake. Let’s make this at home!

Pistachio Basque Cheesecake is a modern innovation combining the classic Basque burnt cheesecake with the deliciousness of pistachio.

Making this cake only uses ingredients that are readily available in supermarkets, such as Cream Cheese, Pistachio Spread, All-purpose flour, and others. The preparation time to make this cake is only 20 minutes, while the cooking time is 2 hours. Serve this while relaxing with family or partying with friends.

What is Pistachio Basque Cheesecake?

This cake is a combination of Basque burnt cheesecake and pistachio. Unlike regular cheesecake, serving this cake usually involves a high-temperature baking process to produce the burnt part. The golden brown color on top is not a mistake, but a distinctive one that gives a caramel flavor and a soft, smoky aroma.

To make this cake using Cream Cheese, Pistachio Spread, All-purpose flour, and others. To make this cake, there are several important steps such as heating the oven, beating cream cheese and sugar, putting pistachios into the batter, adding eggs, pouring heavy cream and flour, filtering the batter, baking process, cooling, and serving. This cake is suitable for those of you who do not like excessive sweetness.

Tips for Making This Cake

Here are some important tips for making this cake so that the results are perfect, creamy, and rich in flavor.

Use Good-Quality Ingredients

Choose a soft, good-quality cream cheese for a smooth cheesecake texture. Use real pistachios or pure pistachio paste without any additional ingredients for maximum nutty flavor.

Room Temperature Ingredients

Make sure the cream cheese, eggs, and heavy cream are at room temperature before processing. This helps all the ingredients mix well and produce a smooth batter without lumps.

Don’t Overmix

Stir the ingredients until well blended, but don’t overmix so that not much air gets in. Too much air can cause the cheesecake to crack during the baking process.

Bake at High Temperature

Basque cheesecake must be baked at a fairly high temperature (around 220–250°C) to get a browned and slightly charred top. This is a characteristic that gives the caramel flavor and distinctive smoky aroma.

Use a Baking Paper-Lined Pan

Line the pan with high-baking paper so that the batter does not overflow and is easy to remove after it is cooked. The paper also helps prevent excessive burning on the sides of the pan.

Watch the Baking Time

Bake until the top is dark brown but the center is still a little wobbly. This slightly undercooked center will become creamy as it cools.

Let it sit and Cool Properly

Once cooked, let the cake cool at room temperature so that the texture really sets and the flavors blend better.

Add Pistachio Chunks for Texture

If you like texture, add toasted pistachio chunks to the batter or sprinkle them on top of the cake before baking. This will add crunch.

Experiment with Pistachio Paste

Use quality pistachio paste; if you don’t have any, you can use ground pistachio powder and mix it with a little oil to create a paste texture.

Serve with Toppings

Serve the cake with a sprinkling of roasted pistachios, whipped cream, or caramel sauce for a more interesting taste sensation.

The Texture of Pistachio Basque Cheesecake

The following is a description of the texture of this cake.

Burnt and Crispy Outside

The top of this cake goes through a baking process at high temperatures, resulting in a blackish brown outer layer like it is burnt. This part has a slightly crispy texture, giving an interesting contrast when we bite into it.

The Very Soft and Creamy Inside

Behind the burnt top, the inside of the cake is very soft, smooth, and creamy like pudding or custard. The texture melts in the mouth and melts easily, giving a sensation of pleasure.

Dense but Light Texture

Although dense, this cake feels light and not too heavy in the mouth because of its creamy and melting texture.

Other Variants of Pistachio Basque Cheesecake

Here are some other variants of this cake that you can try for variations in taste and appearance.

Matcha

Replaces pistachios with high-quality matcha powder for a distinctive green tea flavor, slightly bitter, and fresh aroma. The texture remains creamy with an attractive green color.

Chocolate

Mix melted chocolate (dark or milk chocolate) into a cream cheese batter to create a smooth, intense chocolate version, with a Basque burnt top.

Almonds

Swap out the pistachios for almonds, either in the form of almond powder or almond paste, and add toasted almonds as a topping for a different but still rich, nutty flavor.

The Specialties of This Cake

Here are some reasons that make this cake so special.

Rustic but Elegant Look

This cake appears without a crust and is deliberately baked until the surface is golden, giving a rustic and artisan impression. However, with the pale greenish color of the pistachio on the inside, the visual still looks beautiful and exclusive. A simple appearance, but it hints at a complex and premium taste.

Very Tempting Aroma

The high-temperature baking process gives the cake a distinctive roasted caramel aroma, which blends perfectly with the aroma of pistachio. Each slice gives off a warm and luxurious aroma that makes anyone tempted to taste it.

Suitable for Various Special Occasions

With a mature taste and attractive appearance, serve this cake for family meals, birthday events, premium dessert gifts, or reward moments.

Let’s make this delicious cake right away!

Ingredients of Pistachio Basque Cheesecake

  • 1½ cups Cream Cheese: The main ingredient that gives the creamy, soft texture and savory taste of cheese. It is also the basis of the taste and texture that makes this cake different from other desserts.
  • ½ cup Sugar: As the main sweetener that balances the savory taste of cream cheese and pistachio. In addition, this ingredient makes the cake taste sweet but not excessive, so that the taste of pistachio and cheese remains dominant.
  • ½ cup Heavy Cream: Adds softness and moisture to the cake. Its fat content helps the texture become richer and creamier, while making the cake smoother and melt in the mouth.
  • ¼ cup Pistachio Spread: Gives a distinctive pistachio flavor and strong aroma. This makes the cake unique with a nutty flavor that is evenly and intensely felt.
  • 3 Eggs: As the main binding ingredient that helps the cake harden and maintain its shape after baking. In addition, eggs also give a soft and slightly dense texture without making it dry.
  • 1 tbsp All-purpose flour: As a stabilizer that helps the cake batter bind better and prevents it from being too brittle or breaking. Flour also helps the cake texture a little chewier and keeps it soft.
  • Vanilla Extract: To balance the overall taste of the cake. Apart from that, this ingredient also gives a sweet and soft aroma.
