For example, the base can be fruit puree, melted chocolate, custard, fruit curd, etc. And to this base, we add aerators. Aerators are just what they sound like, something that will aerate the base to make it lighter and smoother. It can be whipped cream, meringue (egg whites and sugar), or pâte à bombe (egg yolks and sugar or both, egg whites and egg yolks). I use whipped cream here.

  • Blueberry jam; Since this is a blueberry mousse cake, of course, you need blueberries. You can’t make a blueberry dessert without fresh berries! You can make your own blueberry jam, or you can buy store-bought. I prefer to make my own. To add more blueberry flavor to the mousse.
  • Whipping cream; Cold heavy cream whips up light and fluffy, so make sure it is well-chilled.
  • Gelatine; Helps the mousse set properly. For a vegan option, you can use agar agar
  • Icing sugar; Sweetens the cream slightly
  • Crumble biscuits; are used for the crunchy base and a middle layer. Add buttery, toasted wafer crumbs to the bottom of each jar so that every serving gets a spoonful of crust.  
  • Unsalted Butter

How to Make Blueberry Mousse Cake

First, in a small bowl, sprinkle 1/2 teaspoon of gelatin over 1/2 teaspoon of cold water. Let it sit for 5 minutes to bloom. This step is essential to ensure the gelatin dissolves evenly.

Second, once bloomed, gently heat the gelatin over a bain marie (a hot water bath) or using a double boiler until fully dissolved. Make sure not to let it boil, as this can ruin the setting properties.

Third, in a mixing bowl, combine the cold whipping cream and icing sugar. Use a hand mixer or stand mixer to whip the mixture until soft peaks form. The cream should be airy and light, not stiff.

Fourth, add the blueberry jam and the dissolved gelatin to the whipped cream. Gently fold the mixture together until smooth and evenly combined. You’ll end up with a soft purple mousse that tastes like blueberry clouds.

Fifth, spoon or press a layer of crushed biscuit into the bottom of each serving glass. Pipe or spoon a layer of blueberry mousse on top. Repeat with another biscuit layer and finish with mousse.

Lastly, refrigerate the glasses for at least 2–3 hours, or until the mousse is fully set. Before serving, you can garnish with fresh blueberries, a mint sprig, or even a swirl of whipped cream.

  • Gelatin Alternatives: For a vegetarian option, use agar-agar powder. Replace the gelatin with one teaspoon of agar-agar powder. Bloom it in the same way and simmer it in the blueberry purée for two to three minutes to activate.

Ingredients
  

  • ½ cup blueberry jam
  • cup whipping cream
  • ½ tsp gelatine
  • 2 tsp Icing sugar
  • 4.8 oz crumble biscuit

Instructions
 

  • In a small bowl, sprinkle the gelatin over ½ teaspoon of cold water and let it sit for 5 minutes to bloom. Once bloomed, bain marie the gelatin in hot water or until fully dissolved (do not boil).

  • In a separate mixing bowl, whip the cold heavy cream and powdered sugar. Whip them to soft peaks. Use a hand mixer or stand mixer.

  • Put the crumble biscuit in the bottom of a serving glass, pipe the mousse, add the crumble again, and pipe the top with the mousse. Refrigerate for at least two to three hours, or until set.
