It’s autumn, and that definitely means it’s apple season!

What is Apple Turnover?

An apple turnover is like a mini apple pie, but with a twist. Instead of a traditional pie crust, it’s wrapped in flaky puff pastry, making it easier and quicker to make. The filling is a sweet mixture of soft, spiced apples, just like in apple pie, but the dough is lighter and flakier. It’s like the perfect hand-held dessert for fall, super easy to eat and serve, and you don’t have to deal with slicing pie!

I’m all about simple, no-fuss recipes, which is why I love using ready-rolled frozen puff pastry. Sure, you could make your own pastry, but honestly, this shortcut lets you whip up a delicious dessert in no time with minimal effort. Plus, as these turnovers bake, your house will smell incredible. They’re the kind of dessert that works when you’re in the mood for something quick on a cozy night, but fancy enough to impress at a dinner party.

Why You’ll Love This Recipe:
  • Warm Meets Cold: The combo of hot, flaky pastry with a scoop of cold vanilla ice cream? It’s pure dessert magic.
  • Time-Saving Shortcut: Using pre-made puff pastry means you get the taste of a bakery-quality dessert without the long prep.
  • Crowd-Pleaser: Whether you’re hosting a dinner party, a family gathering, or just treating yourself after a long day, these turnovers are a hit.

  • Customizable: You can easily swap the apples for pears, peaches, or berries depending on the season or your mood.
  • Don’t Skip the Ice Cream: Seriously, a scoop of vanilla ice cream on the side makes all the difference. Trust me.
  • Texture and Flavor contrast: You’ve got the buttery, crispy puff pastry, the tender, cinnamon-sweet apples, the cold, creamy vanilla ice cream, and a drizzle of caramel sauce. It’s all about balance; warm and cold, crispy and creamy, sweet and just the right amount of tangy.

If you’re looking for a dessert that’s both easy and impressive, apple turnovers with vanilla ice cream and caramel sauce should be at the top of your list. So next time you want to capture the comfort of homemade apple pie without the fuss, remember: turnovers are your shortcut to happiness. And with a scoop of ice cream and caramel drizzle, happiness tastes even sweeter. Let’s dive in!

Ingredients of Apple Turnovers

These Apple Turnovers are flaky, golden, and packed with sweet apple-cinnamon goodness. Quick to make with puff pastry and topped with vanilla ice cream and homemade caramel sauce, they’re the perfect treat for any time! What’s not to love?
  • sheet Puff Pastry thawed; I like to keep sheets of frozen puff pastry in the freezer as they are perfect for a range of quick meals. Most of what you buy from the supermarket is dairy-free and vegan, but just check the ingredients to be sure. You need one pre-made frozen sheet of puff pastry from the freezer section of your grocery store. Let it thaw on the counter until pliable and easy to roll out
  • Medium Apple; most apples will work well for this recipe; however, for the best results, you want to try and use a firm, crisp variety of apple. I am using Pink Lady, which is slightly sweeter than Granny Smith
  • Unsalted Butter: Butter enhances the richness of the filling and helps sauté the apples. As it melts, it blends with the brown sugar and spices to create a caramel-like sauce that coats the fruit. Using unsalted butter gives you full control over the flavor, ensuring the filling is perfectly sweet and spiced without being salty.
  • Brown Sugar, to give the apples sweetness and help create a delicious caramel sauce. You can adjust the amount of sugar based on how sweet your apples are.
  • Cinnamon Powder: A little ground cinnamon is the perfect partner for the apples. They belong each other
  • Cornstarch: This thickens the apple juices to make a syrup so it doesn’t soak the base of the puff pastry. Nobody likes a turnover with a soggy base!
  • Heavy Cream adds a luxurious touch when used in the caramel sauce or drizzled over the baked turnovers. It gives the caramel body, richness, and that silky finish. Cream also balances the sweetness, making the sauce taste smooth and indulgent rather than overly sugary.

How to Make Apple Turnovers

These Apple Turnovers are flaky, golden, and packed with sweet apple-cinnamon goodness. Quick to make with puff pastry and topped with vanilla ice cream and homemade caramel sauce, they’re the perfect treat for any time! What’s not to love?

First, peel and dice the apple into small cubes. In a pan over medium heat, melt the butter, then add the apple, brown sugar, and cinnamon powder. Cook while stirring for about 5–6 minutes until the apples soften and release their juices.

Next, stir in the cornstarch slurry and continue cooking for another 1–2 minutes until the mixture thickens and becomes glossy. Remove from the heat and let it cool slightly.
Meanwhile, preheat your oven to 345℉ (175℃). Line a baking tray with parchment paper for easy cleanup.

Roll out the thawed puff pastry and slice it into four equal squares. Arrange them neatly on the prepared baking tray
Then, divide the apple filling into four equal portions. Place one portion in the center of each pastry square. Fold the pastry over the filling, wrapping it like an envelope, and press the edges firmly to seal.

After that, brush the tops of the turnovers with heavy cream to give them a golden finish. Bake in the preheated oven for about 20 minutes, or until puffed and golden brown.

Finally, let the turnovers cool for a few minutes. Serve warm with a scoop of vanilla ice cream on top and a generous drizzle of caramel sauce. Enjoy!

Recipe Notes;

  • Other fruits, such as pears, peaches, or berries, can be used in place of apples. Just adjust the sugar depending on the sweetness of the fruit.
  • If puff pastry isn’t available, pie dough can be used as a substitute, though it will yield a denser texture. Puff pastry creates that signature flaky, light bite.
  • Leftovers should be stored in an airtight container at room temperature for up to 1 day, or in the fridge for 3 days. To reheat, place the turnovers in the oven to restore their crispiness.
  • Don’t overfill: Too much filling makes turnovers burst open while baking
  • If you have time, homemade caramel sauce takes this dessert to another level.

Ingredients  of Apple Pie Bread Pudding

  • White bread: The main base for your bread pudding, absorbing the custard and holding the apple filling. White bread works well as it has a mild flavor and soft texture, perfect for soaking up the custard.  Our pick for this recipe is day-old brioche, which will soak up the liquid and bake it into a tender, extra-buttery bread pudding. You can also use challah or a French or Italian loaf.

Apple Filling

  • Granny Smith apples: A tart apple variety that adds a nice contrast to the sweetness of the dessert. Granny Smith apples also hold their shape well when cooked, providing texture. Tart, crisp Granny Smith apples provide a delicious contrast to the rich and sweet bread pudding. For a slightly sweeter taste, use Honeycrisp, Braeburn, or Pink Lady apples.
  • Butter: Use to cook the apples, adding a rich, buttery flavor to the filling.
  • All-purpose flour: Helps thicken the filling as it cooks, giving it a consistency similar to apple pie filling.
  • Cinnamon powder: Adds a warm, spicy flavor that complements the apples and gives the filling a cozy, autumnal feel.
  • Brown sugar: Sweetens the filling and brings in a hint of molasses, which enhances the depth of flavor.
  • Water: Adds moisture to the filling, allowing the apples to soften as they cook.

Custard

  • Milk: Provides a base for the custard, helping to soak into the bread and create a creamy texture.
  • Heavy cream: Adds richness to the custard, making the bread pudding soft and decadent.
  • Salted butter: Adds a hint of saltiness and extra creaminess to the custard mixture.
  • Granulated sugar: Sweetens the custard, balancing the richness of the milk and cream.
  • Pinch of salt: Enhances the flavors of the custard and balances the sweetness.
  • Vanilla extract: Adds a subtle vanilla aroma and flavor that pairs beautifully with the cinnamon and apples.
  • Cinnamon powder: Ties the custard flavor to the apple filling and bring serious apple pie energy to this recipe.
  • Eggs: The eggs set the custard, binding everything together for a pudding-like consistency.

How to Make Apple Pie Bread Pudding

First, preheat the oven to 350°F. Line a baking tray with a sheet of baking paper, covering the bottom and sides.

Start by making the apple pie filling. Melt the butter in a medium saucepan over medium heat. Then, add the flour and cinnamon powder, stirring well to combine. Next, add the brown sugar and stir until fully incorporated.

Add the diced apples and water to the saucepan, stirring to coat. Cover the pan and cook over medium heat, stirring occasionally, until the apples are soft, about 10-15 minutes.

Once the apples are softened, remove the saucepan from the heat. Strain the juices, setting them aside for use in the bread pudding.

Now, make the custard. Place all the custard ingredients, except the eggs, in a saucepan over medium-low heat. Whisk until the butter has melted. Then, remove from the heat and add the eggs one at a time, whisking well between each addition. Set the custard aside.

Cut the bread into 1-inch cubes. Place 1/3 of the bread cubes in the bottom of the prepared pan, pressing down to compact them.

Next, spread about 1/3 of the apple pie filling over the bread cubes. Place another 1/3 of the bread cubes on top, press down gently, and spread with another 1/3 of the apple pie filling. Finish by layering the last 1/3 of the bread cubes and the remaining apple pie filling.

Bake and Enjoy!

Pour the custard over the bread layers, making sure all the pieces are well-soaked. Press the bread down gently to ensure there are no dry spots. If desired, sprinkle brown sugar over the top for added sweetness.

Bake in the oven at 350°F for 35-40 minutes, until the top is golden and the custard is set but still slightly wobbly when shaken.

Remove from the oven and let the pudding rest for 10 minutes before removing it from the pan.

Your Apple Pie Bread Pudding is ready to serve! You can enjoy it warm or at room temperature for a delicious snack or dessert.

Recipe Notes;

  • If you find that the amount of bread feels excessive, feel free to adjust it to suit your taste.
  • It’s essential to ensure that the custard is thoroughly absorbed by the bread. This will give your pudding that delightful softness in the center.
  • When heating the custard, keep an eye on the time! You only need to warm it just enough to melt the butter, ensuring that the eggs don’t cook when you mix everything together.
