All the ingredients are simply mixed with a spoon before shaping and baking, making them one of the quickest biscuits to prepare. A great recipe to make with children.
What Are Florentine Biscuits?

Florentine biscuits, or Florentines, are thin, crispy, and caramelized treats loaded with nuts and seeds, usually finished with a layer of chocolate on one side (but I don’t use chocolate here, healthier version). These biscuits are famous for their delicate lace-like texture and nutty crunch.
They’re believed to have European origins, with some saying they come from Italy, while others argue they were first made in France. No matter where they started, one thing is for sure—Florentine biscuits are a worldwide favorite.

What makes them so special? It’s all in the combination of ingredients. Almonds, sesame seeds, sunflower seeds, and even pumpkin seeds create a crunchy base, while caramelized sugar or honey holds everything together. Once baked, they’re dipped or drizzled with chocolate, making every bite a perfect mix of nutty, sweet, and chocolaty goodness.
Best of all? They’re incredibly versatile! You can switch up the nuts and seeds, use dark, milk, or white chocolate, and even add dried fruit for extra flavor. Despite their elegant look, they’re a breeze to whip up at home!

The Difference Between Biscuits and Cookies
Ever wondered whether Florentines are biscuits or cookies? You’re not alone! While the terms “biscuit” and “cookie” are sometimes used interchangeably, there’s actually a difference.
Biscuits (in British English) are usually crisp, thin, and firm. They don’t use much leavening, which keeps them dense and crunchy. Think of shortbread, digestives, and of course, Florentine biscuits.

Cookies (mostly in American English) are softer, thicker, and can be chewy or crumbly. They typically have more butter, sugar, and eggs, making them richer and more cake-like. Classic examples include chocolate chip cookies and oatmeal raisin cookies.
So, where do Florentine biscuits fit in? Since they’re thin, caramelized, and super crispy, they’re definitely more of a biscuit than a cookie! But whatever you call them, they’re absolutely delicious.
Ingredients of Florentine Biscuits

- Florentine Flour – A specialized flour blend that helps create the signature crisp and lace-like texture of Florentine biscuits. You can change to all purpose flour too!
- Sliced Almond – Adds crunch and nuttiness, making the biscuits flavorful and textured.
- Pumpkin Seed – Provides a nutty and slightly earthy taste while adding an appealing crunch.
- Sunflower Seed – Contributes a mild, nutty flavor and enhances the overall texture.
- White Sesame Seed – Offers a subtle nuttiness and a hint of bitterness, complementing the caramelized sweetness.
- Black Sesame Seed – Has a stronger, more robust flavor compared to white sesame seeds, adding depth to the taste.
Variation; You can give a sweetener with sugar, either brown, caster, or white granulated one. Also, for more variation, trying to coat Florentine cookies with chocolate.
