I love the contrast in textures, the soft and freshness brought by the cream cheese filling, and also the great versatility of this dessert, that allows you to adapt it almost freely depending on different events, seasons, or simply tastes. This brownie burnt cheesecake is inspired by a local brownies and dessert company from Bandung, Indonesia which is Amanda Brownies

  • Light Brown Sugar; I prefer to use light brown sugar as it contains molasses giving the brownies a subtle caramel flavor and helping to keep them moist. It also contributes to the chewy texture.

How to Make Brownie Burnt Cheesecake

Brownies

First thing first, preheat oven to 210℃ or 410℉. Line a baking pan with parchment paper. Set aside.

Secondly, in a saucepan, melt butter and dark chocolate chips over low heat until all melted and set aside.

In a mixing bowl, beat eggs and light brown sugar with a hand mixer until the color turns pale and fluffy. Add the butter mixture and vanilla extract then beat again until well combined.

Then, add flour, cocoa powder, and salt and fold with a rubber spatula until there is no lump.

Lastly, pour the brownie batter into a baking pan and set aside. now let’s make the burnt cheesecake

Burnt Cheesecake

First, in a large mixing bowl, cream together the cream cheese and sugar on medium speed, scrape the side of the bowl, then add flour and beat again until smooth and lump-free.

Turn the mixer to a low speed then add the eggs and vanilla extract and beat until just combined. Then slowly pour heavy cream while the mixer is still on low speed and beat again until just combined.

Pour the cheesecake batter over the brownies batter then bake on the center rack for 45 minutes. The cheesecake will rise and brown almost burnt and the center should be jiggly when you move the pan.

Let the brownie burnt cheesecake cool on the counter for 2 hours then transfer it to a fridge for at least 4 hours to cool completely and set.

Slice the brownie burnt cheesecake and serve. Enjoy!

Crullers vs Donut, what’s the difference?

Meanwhile, Donuts come in a variety of types, from classic yeast-raised donuts to cake donuts. Yeast donuts are soft, pillowy, and airy due to the yeast fermentation, while cake donuts are denser with a crumbly texture. Crullers

  • Whole Milk; Milk and water make up the moisture of the dough. Milk gives the dough a richer flavor, make sure you use whole milk!
  • Water; Water makes up the other portion of the moisture. While milk adds flavor water gives the exterior that crispness.
  • Butter; I use unsalted butter here, Butter is the source of fat in the dough, giving it that rich and buttery flavor and tender texture.
  • Granulated sugar; gives the dough a touch of sweetness for a good balance of flavor
  • Salt; helps to balance out the flavor of the dough.
  • All-purpose flour; The main ingredient for making cruller, makes up the body of the donut
  • Eggs; The eggs help make the structure of the donut, allowing it to puff up and become nice and airy. Make sure to use a large egg at room temperature

Vanilla Glaze

  • Powdered Sugar; Aka icing sugar or confectioners sugar. We need this kind of super-fine sugar as it dissolves quickly forming the perfect glaze. As with other simple glazes, powdered sugar (confectioners’ sugar) is the main ingredient of this maple glaze.
  • Milk; Milk helps to thin out the powdered sugar. If you find that the glaze is too thick to dip your donuts in feel free to add another splash of milk. Keep in mind that a little goes a long way. Full-fat / whole milk works best, but you can also use semi-skimmed milk.
  • Vanilla extract; Vanilla extract gives the glaze a vanilla flavor of course! You can leave it out if you aren’t a fan, or change it up for a different extract of your choice.

For other variations, you can try to make;

  • Honey glaze – Same as above, but add 2-3 tablespoons of runny honey into the mix. You can also swap honey for maple syrup.
  • Cinnamon glaze – Combine icing sugar with 1 teaspoon of ground cinnamon and milk (you can use any of your favorite spices instead of cinnamon).
  • Raspberry glaze – Add 2-3 tablespoons of raspberry coulis or raspberry reduction to the icing sugar and milk.

Let’s Make French Cruller With Vanilla Glaze

First, in a saucepan, bring the milk, water, butter, sugar, and salt to a boil. Once it reaches a boil, remove the pan from heat and immediately add all the flour, stirring quickly to ensure no lumps remain. Next, return the pan to the heat and cook the mixture for 2–3 minutes, stirring constantly, until the dough pulls away from the sides and doesn’t stick to the pan.

Transfer the dough to a mixing bowl and let it cool for about ten minutes. After it has cooled slightly, add the eggs one at a time, mixing thoroughly after each addition. Make sure each egg is fully incorporated before adding the next. The dough should become shiny and form a ribbon-like pattern when lifted with the mixer.

Next, transfer the dough to a piping bag fitted with a large star tip and set it aside. While the oil is heating, cut the parchment paper into 20 squares, each about 3 inches wide. Pipe the dough onto each parchment square in a circular shape to form the crullers.

When the oil is hot, carefully place 2–3 crullers, along with their parchment paper, into the oil. After about one minute, gently pull the parchment paper off each cruller. Fry the crullers for 2–3 minutes on each side, or until they are golden brown, then remove them from the oil and drain on paper towels.

  • Put the dough into a piping bag decorated with a large star and set aside. while heating the oil, cut the parchment paper into 20 3-inch squares. Put dough into each square forming a circle.
  • Once the oil is hot, put 2-3 crullers, with baking paper, into the oil. After approximately one minute pull the paper off the crullers. Fry for 2-3 minutes or until golden brown on each side, then remove and drain.
  • In a bowl, make the vanilla glaze by whisking the powdered sugar, milk, and vanilla.
  • Dip the crullers into the glaze, then drain. Repeat with the remaining crullers. Serve hot and enjoy!

Kek Batik; One of favorite Malaysian dessert

Kek Batik is a delightful no-bake chocolate cake that’s quite popular in Malaysia and Indonesia. The cake typically features layers of chocolate and biscuit, giving it a unique texture and flavor. And when you add chocolate ganache, it elevates the cake with a rich and creamy finish.

The batik cake, biscuit cake, lazy cake or kek batik in Malay, requires no baking whatsoever. Usually, this cake served during the eve of Hari Raya, or Eid celebrations.

Why is it called kek batik? Well, Batik cake is named because its distinctive marbled or “batik-like” appearance. Batik is traditional Indonesian textile art where patterns are created by applying wax to fabric and then dyeing it. The “Batik-like” pattern is created by the contrast in color between the pieces of biscuits and the buttery cocoa mixture when they are pressed into a cake pan.  And kek is originated from English word cake.

Before we jump into this chocolatey delight, let’s take a quick look at the ingredients. Our key component is Marie biscuits, which create the layers and structure of the cake. The process is simple: cook these ingredients with a few extras, spread everything in a tray, and let it set in the fridge. Finally, we’ll pour a luscious topping made from chocolate and whipping cream on top—yes, even more chocolatey goodness!

In Malaysia, people use Milo powder for kek batik because the chocolate malt powder is a staple in most households. But you can switch to unsweetened cocoa powder since it’s more easily accessible.

For the best results, it’s ideal to make this cake a day in advance, as the Marie biscuits will become soft, giving it that cakey texture. Trust me it is so easy to make and really hassle and failed-free!

Kek Batik

  • Cocoa Powder; provides the primary chocolate flavor in the cake. It also contributes to the cake’s color and richness. It adds a slight bitterness that balances the sweetness of other ingredients. You can use Milo powder too
  • Marie biscuits: These are a type of plain biscuit that provides the base for the cake. You can substitute them with other similar biscuits like digestive biscuits.
  • Unsalted butter: Butter adds richness and moisture to the cake. You can substitute it with margarine, but the flavor might be slightly different.
  • Condensed milk: This sweet, creamy ingredient adds sweetness and richness to the cake. You can substitute it with evaporated milk, but it will be less creamy
  • Vanilla extract; A little vanilla always ties everything together in a pleasant way. I usually use real vanilla extract

Chocolate Ganache

  • Dark chocolate: High-quality dark chocolate is the base of the ganache. You can use different percentages of cocoa solids to adjust the sweetness and bitterness.
  • Heavy cream: The heavy cream adds richness and smoothness to the ganache. You can substitute it with half-and-half or whole milk, but the ganache might be less rich.
  • Milk; Milk helps to adjust the consistency of the cake mixture, ensuring that the biscuit crumbs and other ingredients bind together well. It adds moisture and a creamy texture, making the cake easier to slice after it sets.

How to Make Kek Batik with Chocolate Ganache

Kek Batik

First, prepare a baking pan lined with baking paper. In a saucepan, combine the milk, sweetened condensed milk, butter, vanilla extract, and cocoa powder. Heat the mixture over medium heat, stirring continuously until well combined.

Pour the mixture into the prepared baking tin and spread evenly with a spatula, making sure there are no gaps between the biscuits. Leave to set in the fridge for 30 minutes before pouring the ganache over the top.

Chocolate Ganache

First, heat a pan of water on medium heat. Melt the chocolate using the bain-marie technique. When the chocolate is melting, add the heavy cream and milk, stirring continuously until well combined.

Pour the smooth cooled ganache over the batik cake. Use a spatula to spread the ganache evenly and tap the pan gently to remove any air bubbles.

  • 8.8 oz marie biscuit

Chocolate Ganache

  • 1/4 cup Milk
  • 1 1/2 cup Couverture chocolate
  • 7/8 cup Heavy Cream

Instructions
 

Kek Batik

  • First, prepare a baking pan lined with baking paper. In a saucepan, combine the milk, sweetened condensed milk, butter, vanilla extract, and cocoa powder. Heat the mixture over medium heat, stirring continuously until well combined.
  • Break the Marie biscuits into pieces and add to the chocolate mixture. Stir gently over low heat until the biscuits are thoroughly coated in chocolate. Once everything is evenly mixed, remove from the heat.
  • Pour the mixture into the prepared baking tin and spread evenly with a spatula, making sure there are no gaps between the biscuits. Leave to set in the fridge for 30 minutes before pouring the ganache over the top.

Chocolate Ganache

  • First, heat a pan of water on medium heat. Melt the chocolate using the bain-marie technique. When the chocolate is melted, add the heavy cream and milk, stirring continuously until well combined.
  • Pour the smooth ganache over the batik cake, which has been cooled in the fridge. Use a spatula to spread the ganache evenly and tap the pan gently to remove any air bubbles.
  • For best results, return the batik cake to the fridge and chill for at least 4 hours, ideally overnight. This will allow the biscuits to soften, making it easier to cut the cake beautifully.

  • Powdered sugar: You can use confectioner’s sugar for a smoother texture compared to granulated sugar. I don’t recommend using granulated sugar because it can make the dough more crumbly. Meanwhile, we want a smooth and tender crust for this tart.
  • Vanilla Extract; To enhance the flavor.
  • Salt; For taste and Balances the sweetness and enhances the flavors of the other ingredients.
  • Egg; This makes the dough more pliable and easy to roll out. Eggs also make the crust more compact.
  • All-purpose Flour; I use All-purpose flour, you can use cake flour for a low-gluten content

Cheese Filling

  • Cream Cheese at room temperature; The primary ingredient in the filling, it provides a creamy texture and tangy flavor that defines the tart. For the best results, use full-fat cream cheese.
  • Sugar; I use white granulated sugar here, to sweeten the filling, and balance the tanginess of the cream cheese
  • Vanilla Extract; To enhance the flavor and Add depth of flavor to the filling, enhancing the overall taste.
  • Egg; To bind the ingredients together, contributing to the filling’s structure. It also helps create the silky, custardy texture.
  • Cornstarch; It helps to set up the filling while baking and keeps the mixture stable during storage.
  • Salt; To balance the sweetness and Enhance the flavor
  • Heavy Cream; The cream is added to achieve the luxuriously creamy center of this cheese tart. It loosens up the cream cheese while adding fat. 

Let’s Make Burnt Cheese Tart

Make a show-stopping Burnt Cheese Tart that has a crunchy crust tart, a melting sweet, and savory cream cheese, and a caramelized burnt top!

Tart

First thing first, in a mixing bowl, add butter, powdered sugar, vanilla extract, and salt, mix with a whisk until slightly fluffy then add egg and mix again. Sift in flour then mix with a rubber spatula until well incorporated, but remember do not over-mix!

Next, hold the dough together then wrap it with a plastic wrap, and refrigerate it for at least 30 minutes.

Roll out the dough with a rolling pin until it reaches a diameter of 20 cm. Gently press the dough into a removable pie pan, ensuring it covers all surfaces.

Now, Gently press the tart dough down so that it lines the bottom and sides of the pie plate, and cut out the excess. and make sure to poke the bottom of the crust with a fork, to prevent bubbles.

Then, carefully place a parchment paper gently press it to the tart dough, and place rice on top of it to prevent the pie from rising in the center.

Now, it’s time to Bake at 350°F (170°C) for 15 minutes on a baking sheet. After 15 minutes, remove the rice and parchment paper, then bake again for 10-15 minutes until the tart is a little bit golden. Please watch carefully in the second bake. Let it cool.

Cheese Filling

For the cheese filling, start with preparing a large mixing bowl, cream together the cream cheese and sugar on medium speed, scrape the side of the bowl, then add vanilla extract and egg and mix with a whisk until well combined.

Then, sift in cornstarch and salt and mix again. Now, pour heavy cream and milk and whisk until well combined.

Next, insert the cheese mixture into the cooled tart crust then bake at 350°F (170°C) for 17 minutes. Remove from the oven and let it completely cool in at room temperature.

Once the cheese tart is cooled, use a blow torch to burn the top of the cheese tart and serve. this is what makes cheese tart burnt! I recommend you not skip using a blow torch for this part.

Banana Bread

  • All-purpose Flour; Forms the structure of the bread, giving it a soft and fluffy texture. Remember, Avoid compacting the flour, as too much can result in dense banana bread. simply spoon it into the measuring cup
  • Baking Soda; Acts as a leavening agent, helping the bread rise and become light and airy.
  • Salt; a pinch of salt enhances the flavors in the bread and balances the sweetness.
  • Very Ripe Bananas; Adds natural sweetness and moisture to the bread, making it tender and flavorful. The riper the bananas, the sweeter and more aromatic they are. Use very ripe bananas with brown spots for maximum sweetness and flavor. Mash these really well using a fork or a potato masher.
  • Eggs; Binds the ingredients together and adds richness, giving the bread a soft crumb. Bring these to room temp for better incorporation into the batter.

Is it too cliché to claim that these chocolate chip banana bread scones are the best I’ve ever tasted? Lately, I’ve become quite obsessed with making scones. I adore the slightly crisp exterior combined with the soft, fluffy interior—it’s like a delightful mix of pastry and cake, but lighter.

Scones are also forgiving and straightforward to prepare, and I’ve been able to use my sourdough discard to create some delicious versions. These banana chocolate chip scones have become a family favorite. They carry a lovely banana aroma, are just sweet enough, and have a wonderfully soft and fluffy texture inside.

They strike the perfect balance between a biscuit and a muffin. Sweet, flaky, soft, tender, and incredibly tasty—scones are a joy to eat when made properly. Fortunately, making excellent scones at home is easy with the right recipe, and this chocolate chip banana bread scone recipe is truly exceptional.

  • Moisture from Bananas: The mashed banana keeps the scones soft and moist for days, and I love the unique crumb texture—it’s slightly different from traditional scones, but perfect.
  • Use Cold Butter: Ensure the butter is completely cold to help form puffs in the scones.
  • Sweeten to Taste: If you prefer sweeter scones, you can add more banana or sugar. in my recipe, I’m not adding more sugar just natural sweeteners from ripe bananas
  • Don’t Overmix: Scone dough shouldn’t be overmixed; err on the side of undermixing. Too much mixing leads to tough scones instead of the desired texture. Avoid overmixing to keep the scones light and fluffy. The dough should be a bit lumpy!
  • Fresh is Best: Scones are always best on the day they’re made, as they lose flavor and texture the next day. If you need to prepare ahead, you can follow the recipe up to the baking step, then refrigerate overnight or wrap tightly and freeze for up to a month. Bake them straight from the freezer, adding a few extra minutes.

  • Banana; Make sure your banana is sweet and ripe, even overripe bananas are best for this recipe. I use cavendish bananas because that’s what is widely available here. You can use any of your favorite bananas and you want to make sure they are ripe and sweet for the flavor to shine through.
  • Chocolate chopped; I use dark chocolate chunk chopped. You can use semi-sweet or milk chocolate chips
  • Cake flour; Low to medium-gluten flour is recommended for making scones. So, I use this cake flour, feel free to use all-purpose flour or wheat flour. I am aiming for a soft and fluffy interior with scones that make them heartier.
  • Baking powder; responsible for making the scones rise, light, and airy in texture too
  • Butter chilled and diced; I use unsalted butter here, It is very important that the butter is chilled. You can grate them or dice them into small cubes. The cold butter makes the scones flaky and airy
  • Egg yolk; Separate the white egg and the yolk because we only use the egg yolk for this banana chocolate scones.

Ingredients
  

  • 3 banana
  • 1/3 cup chocolate chopped
  • 1 cup cake flour
  • 1 tsp baking powder
  • 2 tbsp butter chilled and diced
  • 2 egg yolk

Instructions
 

  • Preheat your oven to 356°F (180°C).
  • Slice the banana and set aside.
  • Then in another bowl sift the flour and baking powder so there are no lumps.
  • Add the cold butter cubes to the flour mixture and mix well until the mixture resembles coarse crumbs.
  • Add the banana, egg yolk, and chocolate and stir until all ingredients are combined and form a slightly sticky dough.
  • Put the dough on a floured cutting board surface, shape the dough into a round shape flatten.
  • Keep the dough for half an hour in the freezer or refrigerator to help it relax, then cut it into 8 pieces.
  • Place the dough pieces on a baking sheet place lined with parchment paper, and brush with the egg yolk and milk mixture. Bake in the oven for 20 minutes or until the scones are golden and evenly cooked.

Double Chocolate Cookies

  • Unsalted Butter cold;  this recipe uses butter as the base for the cookie dough You can use unsalted or salted butter, I use unsalted butter and add the salt separately. But salted butter works too, just don’t add any extra salt.
  • Brown Sugar and White Sugar; We’re using both brown sugar and white sugar. The brown sugar is going to add moisture and a lot of flavor. The white sugar is going to add some crispiness.
  • Egg; you’ll need one whole egg for this recipe. It’s the perfect amount of moisture to make these cookies chewy and not cakey. yolk helps give your cookies soft gooey centers.
  • Vanilla Extract; – vanilla is essential to making delicious chocolate cookies.
  • Cocoa Powder; I love using Dutch processed powder for its dark color but regular will work too.
  • All-purpose Flour; regular unbleached all-purpose flour makes the best chewy cookies.
  • Baking Soda and Baking Powder; help the cookies to rise slightly
  • Salt; don’t leave out the salt! It really elevates the rich buttery, caramel flavors! It also enhances the pistachio taste and balances the sweetness. Moreover, we use unsalted butter here
  • Dark Chocolate couverture; I added dark chocolate to my cookies, but you can use whatever kind you want. This is part two of the chocolate in these nutty chocolate cookies. It’s simply drizzled over at the end and adds a next level of flavor and elegance. I just melt some chocolate chunks from a dark chocolate bar.

Pistachio Kunafa

  • Toasted Kunafa; I love adding this toasted kunafa for extra crunchy when you add it with pistachio. Don’t skip this part!
  • Pistachio Butter; will be ground and chopped to give the cookies the best pistachio flavor. Use shelled pistachios that are unsalted or salted. Roughly chop them and save a handful to add on top of your cookies (optional). These are key for adding a crunchy texture and nutty flavor. If you’re not a fan or allergic, swapping them for walnuts provides a great alternative without compromising on texture. You can add almonds too.
  • White Chocolate couverture; This is optional, add a milky yet sweet taste. And reducing the salt from kunafa.

How to Make Pistachoco Cookies (Pistachio Kunafa Chocolate Cookies)

Pistachio Kunafa Filling

First, Bain Marie a.k.a Melt the white chocolate in a double boiler until smooth and all melted. Then, Transfer the melted chocolate to a mixing bowl. Add pistachio butter and mix well until combined.

Then, gently fold in the toasted kunafa, ensuring it’s evenly distributed throughout the mixture. Scoop the mixture into small, round silicone molds and refrigerate for at least 15 minutes to set.

Double Chocolate Cookies

Using a hand mixer, beat butter, brown sugar, and sugar in a large mixing bowl until fluffy and incorporated.

Next, add egg and vanilla extract and beat again until just combined. Sift in cocoa, flour, baking soda, baking powder, and salt then beat again until well combined.

Now insert the dark chocolate button and stir with a rubber spatula until combined.

Assembly

Start with preheat oven to 350ºF or 175°C. Line the baking sheet with parchment paper. Then, remove the pistachio kunafa fillings from the mold and weigh about 100 g of dough each cookie.

Now, Flatten the dough a little by hand place the filling in the middle then wrap it until the sides of the filling are covered (leaving the top uncovered). Put pistachio crumbles on top of the cookies.

Then, put the cookie dough balls 2 inches from each other so they will not stick when baked. Chill in the freezer for 5-10 minutes before baking. Bake for 12 minutes. After baking, cool for 2-5 minutes before removing to wire racks to cool completely. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Banana Chocolate Cupcake with Whip Ganache Frosting

Ingredients
  

Banana Chocolate Cupcake

  • 2.5 cup all purpose flour
  • 2 cup granulated sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup milk room temperature
  • 2 Eggs room temperature
  • 1/2 cup vegetable oil
  • 2 tsp Vanilla extract
  • 1 1/3 cup mashed banana

Whip Gnache Frosting

  • 1 1/2 cup chocolate
  • 2 1/8 cup heavy cream

Instructions
 

Whip Ganache Frosting

  • To start, bring a pot of water to a simmer over medium-high heat. In a separate bowl, combine the chocolate and heavy cream.
  • Melt the mixture using the bain-marie technique, stirring continuously until well combined.
  • When completely melted, cover the bowl with plastic wrap and refrigerate for at least 45 minutes.

Banana Chocolate Cupcake

  • Preheat the oven: Start by preheating the oven to 350°F. Prepare the cupcake pan, line a cupcake pan with cupcake liners.
  • Mix the dry ingredients: In a bowl, combine flour, sugar, baking powder, and salt.
  • Mix wet ingredients: In another bowl, combine the milk, eggs, vegetable oil, vanilla extract, and mashed banana.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
  • Fill cups: Use a medium-size ice cream scoop to scoop the batter into the cupcake liners, filling them about 3/4 full.
  • Place the cupcakes in the oven and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Prepare toppings: While the cupcakes are baking, slice some bananas for the topping.
  • After the ganache has cooled in the refrigerator for 45 minutes, whip it on medium speed until fluffy. Refrigerate until ready to use.
  • Once the cupcakes are baked, remove them from the oven and let them sit in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Decor a Cupcake

  • Gather your whipped ganache frosting, a piping bag, and sliced bananas.
  • Make sure the cupcakes are completely cooled before decorating to prevent the frosting from melting.
  • Spoon the whipped ganache frosting into the piping bag. If using a tip, make sure it's securely attached.
  • Starting at the outside edge of the cupcake, gently squeeze the piping bag as you move toward the center. As you move inward, gradually reduce the pressure to create a tip, forming a cone shape. Aim for a nice, high swirl that resembles a cone.
  • Place a banana slice on top of each frosted cupcake. You can place it slightly off to the side for a decorative effect.
  • Once decorated, serve cupcakes immediately or refrigerate until ready to enjoy.

Notes

  1. Whipped ganache frosting can be stored at room temperature for 2-3 hours.
  2. For better results, place the ganache that has been in a bain marie in the refrigerator overnight before whipping it.
  3. If you find the cupcake too sweet, you can reduce the sugar by up to 1/4 cup to achieve your desired taste.
